Air Fryer Chicken Breast: Juicy, Not Dry (Times by Size)
Air fryer chicken breast at 180°C for 18–22 min. Timings by size, the flattening trick that stops it drying out, and how to check it's cooked to 75°C.

Cook boneless chicken breasts at 180°C for 18–22 minutes, turning halfway, for breasts of about 180–220 g. Large breasts (250 g+) may need 22–26 minutes. To keep them juicy, flatten the thick end to an even thickness, brush with a little oil and seasoning, and take them out as soon as the thickest part reaches 75°C. Rest for 5 minutes before slicing.
Chicken breast is lean, which makes it easy to overcook. The thin end is done long before the thick end, so by the time the middle is safe the edges are dry and stringy.
The fix is simple: even out the thickness, cook at a moderate temperature and check the core rather than guessing. Here's how.
Why chicken breast dries out
A typical breast is shaped like a teardrop: thick at one end and thin at the other. Without help, the thin end overcooks while you wait for the thick end to reach a safe temperature.
Lean meat also has little fat to protect it. Cooking at a slightly lower temperature for a little longer gives more even results than blasting it at 200°C.
Prepare it properly

A few minutes of prep makes the biggest difference:
- Place the breast between two sheets of baking paper or in a food bag.
- Gently bash the thick end with a rolling pin until the breast is roughly even, about 2 cm thick.
- Alternatively, slice large breasts in half horizontally to make two thinner fillets.
- Brush with oil and season generously.
- Wash your hands and any surfaces after handling raw chicken.
Tip: A quick brine helps too: dissolve 1 tablespoon of salt in 500 ml of cold water and soak the breasts in the fridge for 30 minutes to an hour. Rinse, pat dry and skip extra salt in the seasoning.
Timings by size
All at 180°C in a preheated air fryer, turning halfway. Check with a thermometer from the lower time.
- Small breasts (150–180 g): 15–18 minutes
- Medium breasts (180–220 g): 18–22 minutes
- Large breasts (250 g+): 22–26 minutes
- Flattened breasts (about 1.5 cm thick): 12–15 minutes
- Mini fillets: 8–12 minutes
- Diced breast (3 cm cubes): 10–12 minutes, shaken twice
How to tell it's done
A probe thermometer in the thickest part should read at least 75°C. Without one, cut into the thickest part: the meat should be white all the way through, not pink, and juices should run clear.
Rest the chicken for 5 minutes before slicing. This lets the juices settle back into the meat rather than running out onto the board.
Seasoning ideas

Lean breast benefits from bold seasoning:
- Garlic and herb: garlic granules, dried parsley, oregano, salt and pepper
- Peri-peri style: shop-bought peri-peri rub or sauce brushed on
- Fajita: fajita seasoning, served sliced in wraps with peppers
- Pesto: a spoon of pesto spread over the top for the final 5 minutes
- Breaded: flour, egg and breadcrumbs for homemade chicken goujons
Using leftovers
Cooked chicken breast is handy for lunches. Cool it quickly, refrigerate within two hours and eat within two days. Slice it cold into salads, sandwiches and wraps, or reheat in the air fryer at 170°C until steaming hot throughout.

Frequently asked questions
What temperature should I cook chicken breast at in an air fryer?
Around 180°C gives a good balance of browning and juiciness. Higher temperatures risk drying the outside before the middle is cooked.
Should I cover chicken breast in foil in the air fryer?
It's not necessary. Even thickness and not overcooking matter more. Foil can also stop the outside browning.
Can I cook chicken breast from frozen?
It's safer to defrost raw chicken in the fridge first, unless the pack gives cook-from-frozen instructions.
Why is my air fryer chicken rubbery?
Usually it has been overcooked. Use a thermometer and remove the chicken as soon as it reaches 75°C.
